Simple, Yummy, & Customizable 🙂 -I don’t have exact measurements as I did by taste but here’s the how to 🙂
-Simply slice the zucchini into thin strips with a vegetable peeler.
-In a bowl mix Ricotta Cheese, Shredded Mozzarella, Shredded Parmesan, Salt, Pepper, Herbs of Choice (Basil, Italian Seasoning, etc) – *TASTE* & adjust to preference 🙂 – Mix in an Egg and set aside.
-Take 2 slices of zucchini and lay flat. Lay 2 more slices across first 2 pieces (make an X).
-Spoon some cheese mixture to center. Fold the pieces over and place in dish with folded pieces on bottom.
-Add sauce. Top with cheese. Bake at 350 20-30mins (check at 20mins).
I am 40 yrs. old -a Wife and Mother of 4 (Funny Double Digit Boy, my Rainbow Baby Sassy Girl, my Blue Eyed Silly Boy, and my Sweet-as-can-be Baby Girl). Once a dance instructor and fitness studio owner (closed the doors in 2020). I found my passion in Fitness and Coaching after leaving my Emotionally Taxing Case Management Position. I love to work out on my own AND with others! Throughout all 5 of my pregnancies I continued to work out on my own, run, and with Beachbody programs. I know and understand the self discipline it takes to achieve your desired goals and I am still on that path and have my struggles as everyone else does! I love to offer my support to my clientele with group fitness classes I offer in my community and I feel we work as a team all together to HELP each other. I LOVE offering my support via the web too as I REACH other people that I can't physically see. IT IS AMAZINGLY rewarding and I can't imagine NOT having that as part of my life! Im currently on my postpartum journey once again and so GRATEFUL and BLESSED to live this healthy lifestyle, lead by example for my family, and support others on their journey too!
