First time ever at making scones lol. Aren’t they cute.

Im always up for trying to make something I see that looks good. I also play with the recipe to make it more my style.

πŸ’›2 cups of oats processed into flour in processor (made about 1.5 cups oat flour)

πŸ’›2 tsp Baking Powder

πŸ’›1/4 tsp Salt

πŸ’›1/4 C Ground Almond Flour

πŸ’›1/2 C Coconut Sugar

πŸ’›1/8 C Flax meal

πŸ’›3/4 C ChickPea/Garbanzo Bean Flour (or could use Brown Rice Flour)

πŸ’›7 Tbsp Coconut Oil (room temp)

πŸ’›4 Tbsp Unsweetened Cashew Milk

πŸ’›3/4 C Fresh Fruit of your choice – I used Fresh Blueberries

1. Mix dry ingredients together

2. Add room temperature coconut oil – Mix until clumpy (with pastry blender or hands)

3. Add Milk of choice (Almond, Cashew, Rice, etc) and mix until combined

4. Fold in fruit

5. Put onto parchment lined tray and make a flattened ball and cut like a pie into 8 triangle pieces.

6. Spread on sheet and bake at 375 for 16-20mins

7. Drizzle with honey or maple syrup and enjoy!

I am 40 yrs. old -a Wife and Mother of 4 (Funny Double Digit Boy, my Rainbow Baby Sassy Girl, my Blue Eyed Silly Boy, and my Sweet-as-can-be Baby Girl). Once a dance instructor and fitness studio owner (closed the doors in 2020). I found my passion in Fitness and Coaching after leaving my Emotionally Taxing Case Management Position. I love to work out on my own AND with others! Throughout all 5 of my pregnancies I continued to work out on my own, run, and with Beachbody programs. I know and understand the self discipline it takes to achieve your desired goals and I am still on that path and have my struggles as everyone else does! I love to offer my support to my clientele with group fitness classes I offer in my community and I feel we work as a team all together to HELP each other. I LOVE offering my support via the web too as I REACH other people that I can't physically see. IT IS AMAZINGLY rewarding and I can't imagine NOT having that as part of my life! Im currently on my postpartum journey once again and so GRATEFUL and BLESSED to live this healthy lifestyle, lead by example for my family, and support others on their journey too!
