Yummy yummy Lemon Bars!!
Crust Ingredients/Directions:
2 1/2 TBSP of coconut oil
2 TBSP REAL Honey (love my local -just down the road Honey)
1/2 Cup chopped/shredded unsweetened coconut
1 Cup Almond Flour
Pinch of Salt
1 Egg White (keep yolk aside in separate bowl)
Heat Coconut Oil. Once liquified add the rest of the ‘Crust’ ingredients EXCEPT Egg White. Once everything is mixed remove from heat and stir in egg white. Coat glass dish with coconut oil (or parchment paper) and press crust ingredients into dish. Bake 350 for 10 minutes.
While crust is baking prepare filling.
Filling:
3 eggs plus 2 egg yolks
1/3 cup honey
1/3 cup lemon juice
1 tablespoon lemon zest (about 2 lemons)
1/3 cup almond flour
In bowl beat eggs (until frothy). Add everything else and beat for 2 minutes.
Once crust is done. Pour filling in top and bake for 20-25minutes.
Let cool and ENJOY!!
These didn’t even last the whole day 😳. They came out a bit more custard-like then I thought they would but I LOVED the crust and real lemon flavor –> it was so good!
