Ricotta Cookies…say what?!

So here we go…crazy Sarah concoctions!!  

Oatmeal PB Ricotta Cookies! I know they DONT sound excitingly appetizing BUT…they weren’t bad at all! 

Ingredients & Directions:

1 Tbsp of natural PB (I made it with creamy but chunky would work too!)

1/4 Cup of old fashioned rolled oats

1/4 Cup of Ricotta Cheese

1/4 tsp baking soda

1/4 tsp of vanilla extract

1/8 tsp of cinnamon

1 Packet if Stevia (this could be adjusted to liking-if you think this will be deal breaker mix and taste before adding egg)

1 egg white

–Mix with a spoon!

Preheat oven to 350 degrees. Line baking sheet with parchment paper. Spoon out about 6-8 cookies (depending on size preference) and bake for 10-12minutes. 

They almost have a cake like consistency!

I am 40 yrs. old -a Wife and Mother of 4 (Funny Double Digit Boy, my Rainbow Baby Sassy Girl, my Blue Eyed Silly Boy, and my Sweet-as-can-be Baby Girl). Once a dance instructor and fitness studio owner (closed the doors in 2020). I found my passion in Fitness and Coaching after leaving my Emotionally Taxing Case Management Position. I love to work out on my own AND with others! Throughout all 5 of my pregnancies I continued to work out on my own, run, and with Beachbody programs. I know and understand the self discipline it takes to achieve your desired goals and I am still on that path and have my struggles as everyone else does! I love to offer my support to my clientele with group fitness classes I offer in my community and I feel we work as a team all together to HELP each other. I LOVE offering my support via the web too as I REACH other people that I can't physically see. IT IS AMAZINGLY rewarding and I can't imagine NOT having that as part of my life! Im currently on my postpartum journey once again and so GRATEFUL and BLESSED to live this healthy lifestyle, lead by example for my family, and support others on their journey too!
