Here is the recipe:
Preheat oven to 325 degrees
Ingredients needed:
3/4 C Shredded Carrots
1 Large Egg
1/2 C Maple Syrup (I used homemade delicious backyard Maple Syrup)
1 C Oats (NOT the instant kind)
3/4 C Oat Bran Flour (can use regular oat flour or whole wheat flour)
1 1/2 tsp Cinnamon
1 1/2 tsp Baking Powder
1/8 tsp Salt
1 tsp Vanilla
2 Tbsp Coconut Oil
Directions:
*Whisk oats, flour, baking powder, cinnamon, & salt together in 1 bowl
*In another bowl whisk together melted coconut oil, egg, & vanilla
*Stir in maple syrup to wet mixture until thoroughly incorporated
*Add wet mixture to dry mixture and stir until thoroughly incorporated
*Fold in shredded carrots & chill for 30mins
*Drop onto parchment paper covered baking sheet
*Bake for 12-15minutes (look for little bubbles to have popped on top – like a pancake)
*Cool on baking sheet prior to transferring
