Ok. Here it is. Pancakes MADE in a #Masonjar 🤗

I messed around the last few days to get a ‘Gluten Free’ version. 

.

I did some with some blueberries and without. I found the blueberries added moisture that interfered with the cook time (they liked to burst LOL. I personally would prefer just putting some fresh ones on top after cooked. 

Soooo: (Single serving)

.

1/2 Cup Oat Flour (add a 1-2 Tbsp more for a bit denser pancake OR if adding blueberries in)

1/2 Tbsp Butter (melted) OR Coconut Oil (melted)

1/2 Tbsp of Baking Powder

6 Tbsp UNsweetened Nut Milk (I used Cashew Milk)

Mix up and microwave for 1.5 Minutes. (Though each microwave is different) 

.

Drizzle with PURE maple syrup add fresh fruit on top and WAHLA!!

I am 40 yrs. old -a Wife and Mother of 4 (Funny Double Digit Boy, my Rainbow Baby Sassy Girl, my Blue Eyed Silly Boy, and my Sweet-as-can-be Baby Girl). Once a dance instructor and fitness studio owner (closed the doors in 2020). I found my passion in Fitness and Coaching after leaving my Emotionally Taxing Case Management Position. I love to work out on my own AND with others! Throughout all 5 of my pregnancies I continued to work out on my own, run, and with Beachbody programs. I know and understand the self discipline it takes to achieve your desired goals and I am still on that path and have my struggles as everyone else does! I love to offer my support to my clientele with group fitness classes I offer in my community and I feel we work as a team all together to HELP each other. I LOVE offering my support via the web too as I REACH other people that I can't physically see. IT IS AMAZINGLY rewarding and I can't imagine NOT having that as part of my life! Im currently on my postpartum journey once again and so GRATEFUL and BLESSED to live this healthy lifestyle, lead by example for my family, and support others on their journey too!
