Meatless Meatballs 🙂

So here’s a tasty alternative to a meatball! Eggplant “meatball”

 Ingredients:

Medium Eggplant

1 Egg

1 tsp Olive Oil

1 Tbsp Nutritional Yeast

1Tbsp Almond Meal

1 Tbsp Flax Meal

Spices of choice (I used onion powder, oregano, pepper, garlic, salt) 

Place Eggplant peeled and chopped in a pot with some water (just enough to cover bottom of pot) bring to boil and let eggplant cook until soft (watch and stir often) 

Once cooked strain and squeeze water out. 

Mix other ingredients together and mix all together. 

Coat pan with some olive oil and create balls. Put in oven at 350. Bake for 30-45mins (will depend on how much water was squeezed out-just keep an eye on them)
Makes about 12 balls (or so depending on your eggplant size). 

Enjoy plain or with tomato sauce! Yum!!!

I am 40 yrs. old -a Wife and Mother of 4 (Funny Double Digit Boy, my Rainbow Baby Sassy Girl, my Blue Eyed Silly Boy, and my Sweet-as-can-be Baby Girl). Once a dance instructor and fitness studio owner (closed the doors in 2020). I found my passion in Fitness and Coaching after leaving my Emotionally Taxing Case Management Position. I love to work out on my own AND with others! Throughout all 5 of my pregnancies I continued to work out on my own, run, and with Beachbody programs. I know and understand the self discipline it takes to achieve your desired goals and I am still on that path and have my struggles as everyone else does! I love to offer my support to my clientele with group fitness classes I offer in my community and I feel we work as a team all together to HELP each other. I LOVE offering my support via the web too as I REACH other people that I can't physically see. IT IS AMAZINGLY rewarding and I can't imagine NOT having that as part of my life! Im currently on my postpartum journey once again and so GRATEFUL and BLESSED to live this healthy lifestyle, lead by example for my family, and support others on their journey too!
