Not that kind of veg out 😉 VEGGIES!!
So let me share with you my extent of veggie consumption. Growing up veggies were offered in my home. In fact I still remember my Mom saying ‘eat your carrots it’ll help you see in the dark’ I took a bite-ran to the bathroom (the only room in the house without a window), shut the door, turned out the lights, and thought IM GOING TO SEE IN THE DARK. Nope. No difference. So that was the extent of carrots for me. Just didn’t like them. I liked broccoli, cauliflower , corn, peas….and that was about it. It honestly wasn’t until about 5yrs ago when I started eating clean did I start eating more vegetables and LIKING them. FIRST I noticed when I ate cleaner my tastebuds changed. Flavors were more defined and I started trying new things. Another HUGE change that had an impact on my branching out was offering a CSA at my fitness studio. This forced me to try new vegetables. So now I can’t say there are many vegetables that I DONT like (well still not a fan of raw celery BUT I have no doubt in my mind that’ll pass in time too!)
So VEG OUT. Branch out!
Here’s a new way to look at your meals. Think VEG First! Often we think vegetable is the side so no need for much. But if you focus more often as vegetables as main part of meal you are only doing your body good!
Try Spagetti Squash vs. Spaghetti. Try Cauliflower Alfredo vs HeavyCream/Buttter/Cheese Alfredo, try zucchini lasagna vs. pasta lasagna , & my favorite DESSERT Zuchinni brownies (check out my previous posted blog for recipe).
Also try this roasting mix:
Turmeric, ground black pepper, garlic powder, ground ginger –anti inflammatory and immunity boosting goodies. Fill with equal amounts and wallah. Shake onto some veggies coated with some olive oil -spread on baking sheet-375 degrees 20-30mins and enjoy!
So go get your VEG on!
PS. look up your local farmers market or CSAs available near you! They are fabulous ways to get fresh veggies and more!! Plus your helping your local farmers!! 😉👍
