Who doesn’t LOVE chocolate. Who doesn’t LOVE brownies?! 

How about a guilt free version? Better then a box! These brownies are my GO TO brownie mix!!! Easy to make and ALWAYS yummy in my tummy!!! 

Feels good making a dessert by hand & knowing each ingredient I can pronounce!! 

Zucchini Brownies

1 cup of almond butter

1 1/2 cup of grated zucchini

1 egg

1/3 cup of raw honey

1 tsp of vanilla

1 tsp of baking soda

1 1/2 tbsp unsweetened cocoa powder

1 tsp of cinnamon

2/3 cup of mini chocolate chips (1/3 cup mini chocolate chips on top after finished baking) 

Directions:

-Preheat oven 350°F

-Combine all the ingredients into a large bowl and mix everything together (it may look clumpy and then soupy-depends on water in zucchini)

-Pour into a greased (I used coconut oil to coat the pan) 8×8 baking pan

-Bake for 35-45 minutes, or until a toothpick comes out looking like just melted chocolate vs. raw mix. Sprinkle chocolate chips on top right after taking it out of the oven- set out to cool and ENJOY!

I am 40 yrs. old -a Wife and Mother of 4 (Funny Double Digit Boy, my Rainbow Baby Sassy Girl, my Blue Eyed Silly Boy, and my Sweet-as-can-be Baby Girl). Once a dance instructor and fitness studio owner (closed the doors in 2020). I found my passion in Fitness and Coaching after leaving my Emotionally Taxing Case Management Position. I love to work out on my own AND with others! Throughout all 5 of my pregnancies I continued to work out on my own, run, and with Beachbody programs. I know and understand the self discipline it takes to achieve your desired goals and I am still on that path and have my struggles as everyone else does! I love to offer my support to my clientele with group fitness classes I offer in my community and I feel we work as a team all together to HELP each other. I LOVE offering my support via the web too as I REACH other people that I can't physically see. IT IS AMAZINGLY rewarding and I can't imagine NOT having that as part of my life! Im currently on my postpartum journey once again and so GRATEFUL and BLESSED to live this healthy lifestyle, lead by example for my family, and support others on their journey too!
