Found a recipe and just adjusted a bit and this came out very tasty in my opinion!
Here’s my version:
3 eggs
1/2 Cup Milk (or milk alternative ie. Almond Milk)
1 tsp pure honey
1/2 tsp baking soda
3 Tbsp Coconut Flour
1/4 Cup + 2 Tbsp Almond Flour
1-2 Tbsp Old Fashioned Rolled Oats (not instant Oats)
I mixed wet ingredients together and then thoroughly combined with dry ingredients.
It looks rather wet compared to other pancake mix BUT trust the process.
Heat pan and use Butter or Coconut Oil (or whatever you choose).
Spoon out smaller size pancakes (for easier flipping since it is a thinner mix). Watch it start to fluff up and bubble. Flip, finish cooking, and enjoy!

Im currently on my postpartum journey once again and so GRATEFUL and BLESSED to live this healthy lifestyle, lead by example for my family, and support others on their journey too!
