So for my Mr.’s Bday. He had a request of a Bday dessert…and I made it for him. BUT THEN I wanted to make a little sweet chocolatey treat for myself. So WHATs happening here??
My kind of yum yum.
Chocolate Pumpkin Truffle Cookie
Ingredients:
1/2 C Pumpkin Puree
1/2 C Cashew Butter
6 Tbsp Cacao (or Cocoa) Powder
1 tsp Cinnamon
1/8 C Pure Maple Syrup
Combine in blender and mix thoroughly.
+1 Tbsp Cacao Nibs (or Mini Chocolate Chips)
Spoon mix in and place in refrigerator for 20mins. Scoop onto lined baking sheet.
Bake (350) for 10-12mins
Let cool and keep in fridge. Enjoy!!

I am 40 yrs. old -a Wife and Mother of 4 (Funny Double Digit Boy, my Rainbow Baby Sassy Girl, my Blue Eyed Silly Boy, and my Sweet-as-can-be Baby Girl). Once a dance instructor and fitness studio owner (closed the doors in 2020). I found my passion in Fitness and Coaching after leaving my Emotionally Taxing Case Management Position. I love to work out on my own AND with others! Throughout all 5 of my pregnancies I continued to work out on my own, run, and with Beachbody programs. I know and understand the self discipline it takes to achieve your desired goals and I am still on that path and have my struggles as everyone else does! I love to offer my support to my clientele with group fitness classes I offer in my community and I feel we work as a team all together to HELP each other. I LOVE offering my support via the web too as I REACH other people that I can't physically see. IT IS AMAZINGLY rewarding and I can't imagine NOT having that as part of my life! Im currently on my postpartum journey once again and so GRATEFUL and BLESSED to live this healthy lifestyle, lead by example for my family, and support others on their journey too!
