Pumpkin Pie Bites

Made these yummy pumpkin pie bites 🙂 -tasted JUST like pumpkin pie I was really surprised actually! 

1 cup of pitted dates (soak in room temp water)

1/2 cup chopped walnuts

1/3 cup pumpkin purée 

1/4 cup unsweetened coconut flakes

1 tsp pure maple syrup

1 tsp vanilla extract

2 tsp pumpkin pie spice

Pinch of sea salt

3/4 cup rolled oats (not quick oats)
Once dates are softened place in a blender with all ingredients except the oats. 

Pulse the mixture until well blended. Add oats and hand mix together. 

Place in refrigerator for at least 20mind until hardens enough to roll into little bite size balls. (Made about 24)

Store in refrigerator and enjoy!!

I am 40 yrs. old -a Wife and Mother of 4 (Funny Double Digit Boy, my Rainbow Baby Sassy Girl, my Blue Eyed Silly Boy, and my Sweet-as-can-be Baby Girl). Once a dance instructor and fitness studio owner (closed the doors in 2020). I found my passion in Fitness and Coaching after leaving my Emotionally Taxing Case Management Position. I love to work out on my own AND with others! Throughout all 5 of my pregnancies I continued to work out on my own, run, and with Beachbody programs. I know and understand the self discipline it takes to achieve your desired goals and I am still on that path and have my struggles as everyone else does! I love to offer my support to my clientele with group fitness classes I offer in my community and I feel we work as a team all together to HELP each other. I LOVE offering my support via the web too as I REACH other people that I can't physically see. IT IS AMAZINGLY rewarding and I can't imagine NOT having that as part of my life! Im currently on my postpartum journey once again and so GRATEFUL and BLESSED to live this healthy lifestyle, lead by example for my family, and support others on their journey too!
