From our weekly CSA -basil & carrot tops (garlic scapes could be used instead of garlic clove too) .
CSA Ingredient recipe:
Carrot Top Pesto
•Olive Oil (or walnut oil, avocado oil, your preference)
•Nuts (pine nuts, walnut, pecans, or almonds-etc. your preference)
In food processor process in steps/layers:
-2 garlic cloves & 1/3 cup nuts (pulse to blend)
– add 1/4 Cup grated cheese & pinch of salt
-1 Cup of Basil & 1-2 Cups of chopped carrot tops
-1/4 Olive Oil to start. Add more as needed and desired.
Pesto is so customizable in the sense of preferred flavoring. Add more or less for consistency, flavor intensity, etc.
